How to clean Prawns
1# Grab the prawn with both your hands, positioning the body of the prawn in one hand and the head in another.
2# Hold the body tight in one hand and gentle give pressure in the area connecting the body and head in the other hand, give a twist and pull off the head.
3# Throw off the head and wash the body portion.
4# Remove the shell from the thick end working down the tail.
5# Peel off the shell starting from one end of the tiny leg part to the other end.
6# For Indian recipe espicially Tamilnadu recipe we dont need the tail of the prawns, so peel off the tail too, just like you did the head.
7# To devine, use a small knife and run over the back of the prawn (opposite to the part where the legs were placed) from neck to tail, make sure its 0.5cm to 1.0cm depth depending on the size of the prawn.
8# Carefully pull apart the black vein where you made the cut, the vein runs from the neck down to tail. Wash and place in a clean bowl.
9# The vein will spoil the entire taste of the dish so make sure you clean them all.
10# After cleaning all the prawns place them in a mann satti or a big bowl, add 4 tsp of rock salt and roll over the prawns and salt by hand for 2 min. Wash them in cold water, remove all the salt and place them in a clean bowl ready for cooking.
