The Tamil name for Bengal gram is "Kadalai paruppu".

In present day, Tamil cuisine and in general Indian cuisine, Bengal gram plays a major role. In Tamil cusine, there are various ways of using "Kadalai paruppu":

Bengal gram boiled:
Boil Bengal gram in cooker. Use them for making Sundal.
Note: Before boiling, soak them in water over night.

In Tempering:
Few Bengal grams (Kadalai paruppu) are used in Tempering process for some dishes like Lemon rice.
Few Bengal grams are used to add taste and experience texture while eating several dishes. For eg: Bengal grams are used in "masala" for "masala dosai".

Deep fried Bengal gram:
Deep fried Bengal grams mixed with a little chilli powder and salt makes a great savoury. Goes well with evening snack along with Chai (tea) or Coffee.
