Salt

The Tamil name for Salt is "Uppu".

Salt is universal. Except for dessert it is used in most dishes. However Salt is very useful for traditional country side food like Kanji, Pazhayathu (Old rice soaked in water overnight). Because these food is just rice with water. Hence Salt adds a great taste.

In present day, Tamil cuisine and in general Indian cuisine, Salt plays a major role. In Tamil cusine, there are various ways of using "Uppu":

Rock Salt:
Rock salt is the traditional way of using salt in Tamil cuisine.

Unlike modern cooking like western cooking where everything is measured in grams, traditional Tamil cooking and in general Indian cooking, the cook will take rock salt approximately in hand and use them for cooking. Rock salts are healthy and delicious.

Grained salt:
In modern day cooking, city dwellers tend to use grained salt for cooking. This is the most common one in the present days. Our recipes use measurement based on this salt.
