Aappam

Aappam looks like a curved Dosai. Aappam is a delicacy. The side dish for Aappam is pure coconut milk. The non-veg version of Aappam is Egg Aappam.

Aappam is very famous in Sri Lanka. In South Indian states, you can find Aappam more common in Kerala compared to other states.

Making the batter for Aappam is little different from Idly Dosai batter.

Until 5 or 6 years ago, Aappam can be had only home made or some authentic restaurants. Nowadays Aappam has caught upon in the restaurant marketing scheme and they have a special Aappam corner with a glass window displaying how Appam is made. This attracts crowd both local as well as tourists.


Let us see how a typical Appam is made.

Take 2 laddle of batter (good to enough to make one aappam).

The pan you should use for this must be a round bottom stir fry pan or a round bottom wok. In Tamil Nadu, we have what is called as "Aappa satti" or "Aappa kallu", a pan used to make Aappam. This looks like a Vaanal which we use for making dishes that are deep fry or just fry. For our discussion, let us simply call it "pan"

Heat the pan, put some oil in it and spread the oil throughout the surface.


Take a laddle filled with batter and pour it in the pan like shown in the picture below. If we do it rightly, the batter in the middle portion (the round bottom pit of the pan) should be thick and gradually the batter should get thinner when it goes up. See the below images to get this done.

Take the pan in two hands and rotate with a slight angle.

Continue until it is spread from bottom to all the sides of the pan.

Close the pan and let it cook for a about 2 min.

Open the lid to see if the appam has cooked by checking the edges. Use a spatula for this. Once cooked remove the appam using a flat spatula and Serve aappam in a plate.

You can have coconut milk as side dish. Either pour on top of the appam and eat or dip and eat.

Alternatively you can have vegetable kuruma for side dish.
