Varuval
The English language equivalent of Tamil language word "Varuval" is Saute. However we call the varuval dish as Fry in English translations. For example, "Fish fry" for "Meen varuval". This is not the fish fry similar to the fish and chips but a slow saute.
Varuval's are side dish in Tamil meals.

All the varuvals goes well with Sambar, Kulambu and Kuruma the key main dish of Tamil meals.
Varuval sometimes look like fry, deep fry or masala. Masala here means semi gravy type dish. Best example to showcase is the Japanese quail fry or Kaadai masala.
Fish fry: You will usually get the fish cleaned from the shop. However you have to clean the fish again. Add Sambar podi and Chilli powder with salt as per your taste. Keep it marinated for 30 min or so. Then fry them in little oil. Check here for detailed recipe.
Prawn fry: Clean the prawans. There is a detailed process to do this. Even when the shop has cleaned the prawns, you will have to ensure the intestines are properly removed. If not remove them. You can make Prawn fry similar to Fish fry, however if you add onion, tomato and garlic the Prawn fry will be more authentic Tamil style. More detailed recipe is on the way.
Chicken fry: Clean the chicken. You can make chicke fry similar to fish fry, however if you can add onion, tomato and other masalas, similar to Mutton fry, you will get authentic chicken fry. More detailed recipe is on the way.
